Peanut-Coconut Noodles

The proportions on this recipe are pretty inexact; play around a little bit until it's the right consistancy and it pleases your taste buds.

Sauce:
Peanut butter: chunky and/or creamy
Coconut milk
Sriracha hot sauce
1 lime
Black bean paste
scallions(sliced), garlic(minced), and ginger(grated)

Noodles: rice or lo-mein Bean sprouts, cilantro, more scallions, and lime wedges

-We sauted the scallions in a little PB and coconut milk; it's uncoventional, but it worked OK-

Mix up all the sauce ingredients in a saucepan and stir together. Let simmer for 15-20 minutes.
Serve over noodles; add whatever garnishes you want.

It's good warm or cold.
